Whole30 - Day 1

Hola, internet friends! Today was the first day of my Whole30 challenge. It went great! The first day is always kind of easy though, isn't it? It's when you're still enthusiastic and don't have any cravings yet! haha.

It also helped that I was prepared and barely had to think about food all day.

First things first: COFFEE. The Whole30 plan allows coffee BUT it doesn't allow sugar or dairy so my normal way of drinking my coffee (whole milk and splenda) was out. So I decided to try coconut milk.

It was awesome! I didn't really taste the coconut much, but it was rich and creamy and delicious. Although the plan recommends using regular (and not light) coconut milk, I figured the light would be better for stirring into coffee. I was right. It was perfect. 


For breakfast I had my Sweet Potato Hash casserole that I blogged yesterday. I topped it with avocado. It was messy eating, but tasted great. Like my beautiful aluminum foil backdrop??? #foodphotographywin



I ran some errands over lunch and when I got back I had my salad: spinach, broccoli, red pepper, avocado, roasted curry chicken, and cilantro. Dressed with basil-infused olive oil, lime juice, and a bit of white wine vinegar. 

Dinner was just something that I threw together at the last minute, but it was pretty tasty. I had about a third of a super large sweet potato left over from last night, so I microwaved it, while I cooked some lean ground pork on the stove. I seasoned it with nutmeg, herbs du provence, salt and garlic, and then added a bunch of spinach. Threw it all on top of the sweet potato. 

So that was a pretty good day! I never felt hungry, was not obsessing about what I was going to eat next, and didn't get my usual 3pm crash. It's still only day 1, and I know my body has to get used to the low carbs, but I love the good days like this. 

I also weighed myself this morning. The plan recommends putting the scale away for the duration of the challenge, so that you don't get discouraged by small fluctuations, or get too distracted by the 'weight' portion of it. But I wanted to get a starting point so I'll be able to compare it at the end. 

Starting weight: 221.6

Day 1: Overall, great. Biggest challenge was that I still have a bit of a cough and seriously wanted a Riccola cough drop at several points!!

  1. Your photos are always so amazing, Andrea! And the food looks absolutely delicious. I think I need to start adding some broccoli to my salads...

    (I would say that I need to try that sweet potato hash casserole but I can't right now! Maybe I should be avoiding your blog altogether, haha.)

    1. Thanks Katie! :) Broccoli in salads is awesome -- I steam mine first because I don't love raw broccoli. I just steamed a huge batch on Sunday and now it's ready to throw into salads all week.
