Whole30 - Day 3

Three days in -- that's 1/10 of the way there! So far so good.

Today I had more of my sweet potato hash, with avocado. I actually ate at home this morning instead of taking breakfast to work.


Still delicious! A piece of this keeps me pretty full for a good four hours, which is perfect for my morning. 

For lunch I used some of the mayo I made last night and made chicken salad. YUM! I used the baked curried chicken breasts I made the other day, and added some mayo, dried cranberries, and slivered almonds. Twas delicious! I ate it on a salad with spinach, broccoli and avocado. 


After work I stopped at The Big Carrot and found a HUGE head of cauliflower on sale. I took it home, chopped it up and threw it in the food processor to make 'cauliflower rice'. Now I have a huge container that should last awhile. 


While I was at The Big Carrot, I also picked up a piece of salmon, and a small jar of vegan basil pesto. I cooked that up with some broccoli and 'rice'. It made an AWESOME dinner. Delicious. 


Eating this way makes me feel SO GOOD. I can't explain it. Of course, when I'm NOT eating this way, it seem impossible -- give up sugar? grains? Should I give up breathing also? But as soon as I do it for a few days I feel fantastic, and like I could plow ahead this way for a hundred more days. 

Must find a way to bottle this feeling. Hmmm. 

I'm off this Friday so I'm looking forward to a nice long weekend. This is also the first weekend in ages that I haven't had work to bring home with me. Whatever will I do with all my new free time?!

    1. Thanks Kellie! Welcome. :) The mayo was so easy -- I was shocked! Haha -- I sort of expected it to be a disaster, but nope!

    1. The rice is awesome! Although it was a surprisingly messy process to make. OMG my kitchen was COVERED in little bits of cauliflower! lol
