Whole30 - Day 18

Day 18 ... getting there. :)

Nothing too exciting to report today. Same old, same old.

Breakfast: Sweet potato hash, coffee with coconut milk
Lunch: Salad with spinach, carrots, tomato, leftover crockpot chicken, and olive oil and balsamic vinegar for dressing.

Dinner was something I originally found on the blog Holly Would If She Could (another blog I love. I wish Holly and I were friends in real life!) It's called Joe's Special. I looked it up online once and it seems to be a San Francisco specialty, dating from the 1920s. Cool. All I know is it's tasty. I used the recipe from food.com: Joe's Special


I just used a bit less spinach -- I didn't have any frozen, so just crammed as much fresh baby spinach into the pan as I could. I've actually made this before (the same way) -- it's really good. It's pretty flexible too -- I've seen other recipes that include a lot more eggs, and some involve red wine / beef broth. 

After dinner I had a few sweet juicy Ontario strawberries. As much as I don't have cravings these days, if I take a pint of strawberries to the living room while I'm watching TV, I WILL still pig out on them. 


I forced myself to stop after I'd eaten about 1/3 of the container, but I probably would have kept eating till I felt sick. In my defence, they are VERY delicious right now. Ontario strawberries were so disappointing last summer -- they never got very good. We're making up for it this summer. 

Well, Friday tomorrow! TGIF!
