Today was just another average Whole30 day ... eggs, sardines, and avocado for breakfast. Coffee with coconut milk. Hot and sweaty bike ride to work.
Lunch was a little bit of everything. Leftover sweet potato fries from last night, leftover green beans, a bit of shredded cabbage, some chopped tomato, and the last of the roast chicken. All thrown together in a bowl and drizzled with sunshine sauce. Hard to photograph, easy to love.
I stopped at the grocery store on the way home and got a bunch of things for the week. I had planned to make a breakfast casserole for tomorrow and bought everything I needed ... except eggs. DOH. I do have two left though (just not enough for a casserole), so expect to see more scrambled eggs tomorrow.
For dinner I threw together a simple green curry. I sauteed one chicken breast and one chicken thigh in coconut oil, then added chopped onions, broccoli, cauliflower, green beans and grated carrots. I poured in a can of coconut milk, and a couple tbsp of Thai Kitchen green curry paste and let the whole thing simmer away until the veggies were cooked. Could not be simpler -- and it's so delicious!

I had a few strawberries this evening, with some sparkling water for a treat, and I have leftover curry for tomorrow's lunch (maybe even the next day too!).
So...I hate to be THAT person, but ... is anyone else kinda ready for FALL? It's just too dang hot here. If I was lounging by a pool I'd be in heaven, but having to actually tend to daily life type stuff is really a drag right now. I'm craving a crisp fall breeze, sweaters, and leaves that crunch under my feet. No one shoot me okay? I'm just saying!
