Whole30 - Day 8

Today Monday = Sunday. After a lovely four day weekend, I'm back to work tomorrow. But fear not -- I have Friday off again, so I only have to WORK for three days this week. Yessssss.

Let's see -- breakfast. Same as yesterday, same as the day before. What can I say, I like routine. I made a smaller portion this time though -- just two eggs instead of three, with zucchini, onion, and a smaller piece of smoked salmon. Twas perfect.

I didn't get hungry for lunch but had a small snack of strawberries and coconut butter before I headed to the grocery store. I stocked up on a few things for the week, but I also found cherries on sale so bought a huge bag. When I got home I ate a half dozen or so and felt AWFUL afterwards -- dizzy and like I needed to sit down. I honestly think it was my blood sugar, reacting to the fact that I was only eating fruit and no protein. Having strawberries and then cherries is apparently too much sugar for me now???  What WHAT?

Anyway, I spent some time today prepping a couple of things for the work week. I made another breakfast casserole:


Last week I did eggs with ground beef, sweet potato, and salsa. This week I mixed it up by using eggs with ground pork, apples, and coconut milk. Zany, I know. I love "sweet with savoury" combos, but I've never tried a quiche-type dish with something sweet. So this may end up being awful! I'll let you tomorrow. If it's good, I'll share the recipe. :) 

Next up, I made a batch of Rogan Josh, from The Clothes Make The Girl. I really liked this! Tonnes of spices and interesting flavours. I used beef instead of lamb. 


We had it with cauliflower rice (yes, I'm still eating this!) and a few leftover green beans. 


The funny thing is, I complained to Shaun that I found this dish a bit too salty, and he was shocked. He said, "It's so weird to hear you say that!" Which is true, because normally I'm the one who wants MORE SALT. In fact, I get mad at him when he buys chips or crackers with reduced salt. Ha! But he didn't find this dish salty at all and I did ... just another way my tastes are already changing I think. Craziness. 

Just for a little variety, I also made up a pitcher of flavoured water: lemons, cucumber and mint. Refreshing! The mint especially is AWESOME. I'm thinking I might experiment with more of these flavoured waters that I pinned ages ago. 



I actually think I have enough leftovers in the house now to get me though my three days of work this week. Then Friday will be for more cooking. I enjoy it, but it does seem to never end, doesn't it??

  3. Thanks for the flavored water link, Andrea. I'm trying to jazz up my water and I tried Perrier for the first time and I don't know what took me so long! I'm looking forward to trying the raspberry lime one :)

    1. Perrier is so good, right? My favourite is the pink grapefruit one. Harder to find, but sooo good.
