Whole30 - Day 9

Good evening! (I think I'm physically incapable of typing the words 'good evening' without doing a total Dracula voice in my head.)

So anyway... "Gooood eeeeevening..."

It was back to work today, although I must admit, it wasn't too bad. Right now I'm busy enough for the time to pass quickly, but not so busy that I'm losing my mind! Always a good place to be.

I started out the day with a piece of my breakfast casserole, that I made yesterday. Eggs, coconut milk, ground pork, and grated apples. It was ... interesting. Actually, the apples were fine, but I didn't dig the spices I added. I think I'm going to play around with this after the Whole30 is over -- I'm thinking that using sausage instead of plain ground pork, and maybe adding a little gruyere... Yes, I definitely think it has potential.


For lunch I had green curry leftover from the weekend. I added some cauliflower rice. (Are you sick of me typing the words "cauliflower rice" yet? Because I am!) I noticed when I was packing the curry up for lunch that I'd basically already eaten all the chicken out of it (whoops!!), so I chopped up a bit of pork loin and threw it in. It was really good but I could only eat about half. I left the other half in the fridge for tomorrow.

Dinner was leftover Rogan Josh from last night. I actually decided to eat at the table tonight... mostly because I've been reading this book and can't put it down: 


I'm such a sucker for any kind of mystery novel. This one's not even that great (although it's hard to tell with mysteries, because so much hinges on the ending. It can really make or break the book) but I still can't put it down. It's like I just. have. to know. what happens. 

I'm always looking for good mystery novels, so feel free to recommend some in the comments. :)
