Back to the Whole30 - the first day

Today was the first day of my Whole30 challenge. Yippee! I'm looking forward to getting back into the groove.

This morning started with the dreaded weigh-in, which turned out to not be as bad as I was expecting. Not good, but pretty much right where I was at before the holidays.

I didn't have a whole lot of groceries on hand, so breakfast was simple: scrambled eggs, sardines and avocado. On the side I had coffee with coconut milk.


In the afternoon, I hit up three different grocery stores and stocked up on all kinds of goodies for the week, and then spent another little while prepping things. I poached chicken breasts, chopped peppers, made zucchini noodles, steamed some broccoli, and made a big pot of soup. 

I had some of the soup for dinner. This had vegetable broth, coconut milk, and green curry paste as the base, and then poached chicken, sweet potato, onion, red pepper, broccoli, carrots, and cabbage in it. Delicious! And lots left over for this week. 



Afterwards, I snacked on a few grapes.  I also had a half a banana this afternoon. 



Now I'm just sipping a chai tea and watching Castle with Shaun. Tomorrow's my first day back to work after a very glorious two weeks off, and I'm really dreading it. You know how some people say they would get bored if they didn't have a job to go to? Yeah, I am not one of those people. 

Besides, why would I want to go to work when I have this cutie-patootie keeping me company at home? I mean, seriously. HOW CUTE IS THIS DOG? 


Anyway, that's it for tonight. I'll be blogging this whole challenge, so consider yourselves warned. :)

  2. That soup looks and sounds wonderful.

    I am in your same shoes. Tomorrow is my first day back to work and I am dreading it after a very relaxing holiday. And if I stay home I have a dear old kitty cat and two kittens!

    1. Haha, yes, I'd take either of those. Maybe not the sugar-daddy part though, I'd kind of like to keep Shaun around. Hmmm, maybe HE could become rich ... I'll suggest this to him. ;)
