Whole30 - Second Day

Here, let me just get this out of the way: today SUCKED. It was already my first day back at work after two weeks off, so it was already going to kind of suck, but on top of that, Riley decided that last night was the perfect night to pace restlessly around the house, growl at the cats, knock his toys down the stairs, and need a pee trip at 3am. I LOVE MY DOG. Haha!

And on top of that, I was definitely suffering from the Whole30 day two 'hangover'. Headache, tired, brain fog - the works. If you ever do a Whole30, bear in mind that the first few days kind of suck. Especially if you've been living off wine, stuffing and Toblerone for the last three weeks. Apparently.

But the only thing to do is power through, so power through I did.

When I woke up this morning, I actually wasn't that hungry. I was going to have eggs, avocado and sardines, but couldn't stomach the thought of the sardines. Instead I just had eggs, spinach and a bit of avocado. This was perfect, actually.



Once I got to work I had a coffee with coconut milk. A very, very large coffee. 

For lunch I had a salad with spinach, shredded cabbage, poached chicken breast, avocado and cilantro. I dressed it with olive oil and balsamic vinegar. Yum. Avocado in salad is the best thing ever, no??


In the afternoon, I had a kiwi. 



For dinner I tried something new that I really enjoyed: Comfort Noodles from The Clothes Make The Girl. It's zucchini noodles cooked with egg and garlic, and then topped with toasted almond meal. I actually prepped the zucchini noodles yesterday and left them in the fridge overnight, wrapped in paper towels. That made it quick to throw together in the pan when I got home from work tonight. I probably could have eaten twice this amount, it was so good.



In fact, when I was done, I was still hungry, so I also had a bit of yesterday's coconut curry soup. And then a few grapes. And now a cup of peppermint tea.
