Anyway, I kept breakfast simple -- and had the exact same thing as yesterday:
Eggs, spinach and avocado. I had three eggs today instead of two, because yesterday I got quite hungry. Three seemed much better.
I also had pretty much exactly the same lunch:
Spinach, shredded cabbage, carrot, avocado, chicken and cilantro, dressed with olive oil and vinegar. Afterwards I ate a banana.
I also packed some of my coconut curry soup from the other day. I ate it around 4pm, which was perfect because I had to run a couple of errands after work so I didn't get home until after 7.
For dinner I just ended up doing something super simple.
Looks gross, tastes delicious. I had riced some cauliflower the other day, so I threw some of that in the microwave, and then added a chopped tomato, half a chopped avocado, a small can of tuna packed in olive oil, and a spoonful of capers. Delish! And if your cauliflower is already done, you can throw this together in the time it takes to chop the tomato and avocado. That's my kind of weeknight dinner.
Still feeling a bit of carb-withdrawl today. I felt headachy and fuzzy and kind of like I might be coming down with something. I hope it passes soon!
